Catfish BLTs

BLTs with a twist! Crispy nuggets of sweet catfish and a lemon mayo are added to this all-time classic and served as a sub sandwich.

Ingredients

  • 4 Sea Best Catfish Fillets, thawed
  • 1 teaspoon salt
  • ½ teaspoon pepper 
  • ¼ cup canola oil 
  • ¼ cup mayonnaise 
  • 4 teaspoons fresh lemon juice
  • 4 sub rolls, cut in half
  • 8 Boston or Bibb lettuce leaves
  • 8 slices Roma tomato
  • 8 bacon strips, cooked

Directions

  1. Season Sea Best Catfish Fillets on both sides with salt and pepper.
  2. In large skillet over medium heat, heat oil.
  3. Cook catfish for 3 minutes on each side or until golden brown and fish flakes easily with a fork.
  4. Meanwhile, combine mayonnaise and lemon juice; spread on sub rolls.
  5. Top with catfish, lettuce, tomato and bacon.
